A piece of history: Les Amis, the French translation of 'friends', is the sophisticated first restaurant of the Les Amis Group family. In the 1990s, there was a dearth of independent fine-dining restaurants in the local food and beverage scene, and Les Amis filled the void, becoming the trend-setting fine dining restaurant when it opened in 1994.

Who’s the chef? The executive chef is Sebastien Lepinoy, an alumnus of L’Atelier de Joël Robuchon Hong Kong and the now defunct Cépage in the same city. Lepinoy spent a total of 17 years with Joël Robuchon before he joined the Les Amis group.

Away from the pass: When he’s not cooking at Les Amis, Lepinoy is either mountain biking, engaging in Muay Thai boxing or spending time with his Korean wife, Olivia Lee, a TV chef and cookbook author.

Signature dishes: Classic Lepinoy dishes include cold angel hair pasta with kombu, caviar and black truffle; line-caught sea bass from Saint Gilles Croix de Vie in France, served with a traditional Americaine sauce; sea urchin soufflé with sauce anisé and kristal caviar; and egg meurette with a layer of black truffle and sauce bourguignonne.

Artful hospitality: Recognised with the Gin Mare Art of Hospitality Award in 2020, Les Amis seeks to coddle diners with the finest white-glove service. The restaurant also runs a French producer-based residency programme that sees truffle masters, cheese experts and more advising diners on the finer details of their dishes.
